Abstract: An enzymatic method for determination of the total fermentable sugars in the absence of melibiase is described. The results of the method are relevant to utilization of sugar factory products by Saccharomyces cerevisiae. In principle, the sum of glucose and fructose, after hydrolysis of the oligosaccharides, is determined by means of β-fructosidase. The aim of the work is to obtain, by modifying the well-known hexokinase method, a reproducibility that is adequate for the determination of major sample components. Full text
