Abstract: New analytical techniques are described which could be of significance for the sugar industry. First it is shown how a balance at the beet end of sugar factories can be calculated from examination of dried samples of beet, pressed pulp and carbonatation mud. Then a polarimetric method is reported which relies only on weighing and thus can easily be automated. Finally, it is demonstrated how enzymatic determination of L- and D-lactic acid in molasses can provide clues to the microbiological processes in diffusers.
